Ingredients
Cookies:
- 2 cups all-purpose flour, spooned and leveled
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened
- 3/4 cup light brown sugar, packed
- 1/4 cup granulated white sugar
- 2 egg yolks, room temperature
- 1 tablespoon vanilla extract
- 1/4 cup butterscotch chips, melted and slightly cooled
- 1/2 cup butterscotch chips
Buttercream:
- 1/2 cup unsalted butter, softened
- 1/8 teaspoon salt
- 1/2 cup butterscotch chips, melted and slightly cooled
- 1 cup powdered sugar
- 1/2 teaspoon vanilla extract
Directions
Step 1: Mix the dry ingredients
First things first, preheat your oven to 350°F. (Did you know there’s a scientific reason why most recipes call for preheating the oven to 350°?)
Then, add flour, baking powder, baking soda and salt to a medium bowl. Promptly whisk together—the right way!—and move the mixture to the side.
Step 2: Mix the wet ingredients
Next, add the butter, brown sugar and white sugar to a large bowl. Use a stand mixer on high for 2-3 minutes until the butter and sugars are creamed together. From there, add the egg yolks, vanilla extract and melted butterscotch chips to the bowl before mixing on medium speed for 1 to 2 minutes.
Step 3: Combine the wet and dry ingredients
Use your mixer on a low speed until the two are fully meshed. Then, take the unmelted butterscotch chips and stir them fully into the dough. The recipe recommends using a rubber spatula.
Step 4: Scoop dough onto a cookie sheet
For each cookie, drop 2 tablespoons of dough on a baking sheet lined with parchment paper. Each of the cookies should be about 2 inches apart. Go ahead and pop into the oven and let them bake for 10 to 11 minutes. Let the cookies cool on a baking rack.
Step 5: Make the buttercream
Grab all of your buttercream ingredients and use a stand mixer to combine thoroughly in a large bowl.
Step 6: Frost the cookies
Once the cookies are cool, use a mini spatula to frost each one with buttercream. Have fun with by drizzling caramel and sprinkles on top, too. These cookies definitely earn a Hogwarts stamp of approval.
